Marinated Banana Peppers


1 Pk Banana Peppers- they can be hot, sweet, or some of each you decidepeppers
2 C Lemon Juice
2 C Vinegar
2 C Water
2 T Oregano
1 C Onion Chopped
Canning or Pickling Salt- Regular Table Salt will not work. It causes the jars to appear cloudy!
Okay, lets get started of course you know to use clean sterilized jars. I use my dishwasher for this and then place the jars in my canner until they boil. Combine the Lemon Juice, Vinegar, Water, Onion, & Oregano in large non reactive pot to boil. Fill the hot jars with the Peppers… you can slice them into rings or as I did cut them in half and remove the seeds in big strips. Place 1 t salt in each quart jar or 1/2 t in each pint jar. After packing them into the jars you will pour the hot liquid over them and place hot lids and rings on. Then put them back into the boiling water bath for 30 minutes. Enjoy.
