Tasty Tater Skins

taters4 Yukon Gold Potatoes (they were on sale- my mom got 10 lbs for us)
4 Slices Bacon
2 C Cheddar Cheese
3 Green Onions
Jalapeno Peppers if you like

I baked the potatoes wrapped in foil, sprayed with Pam, and sprinkled with sea salt. My potatoes took about 2 hours at 400 degrees. I then sliced them& scooped out some of the insides. Save this for baby food if you so desire. Raise oven temperature to 450 degrees. While the potatoes are cooling a bit fry your bacon and now take a deep breath…Roll the potatoes in the bacon grease and place skin side up in 9 x 13 pan. Return the potatoes to the oven for 8-10 mins. Then flip potatoes over and fill with cheese, bacon, green onions, and peppers. Serve with ranch sour cream.

Ranch Sour Cream
1/2 C Sour Cream
1 T Hidden Valley Ranch Dry Salad Dressing Mix
Mix well.
