Fresh Lemon Blueberry Bread

When life gives you lemons…make Lemon Blueberry Bread!  This recipe is absolutely delicious give it a try!lemon bread






1/3 cup melted butter
1 cup white sugar
3 tablespoons fresh squeezed lemon juice
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
2 tablespoons grated lemon zest
1/2 cup chopped walnuts
1 cup fresh or frozen blueberries
2 tablespoons lemon juice
1/4 cup white sugar

Preheat oven to 350 degrees.  Grease and flour a 9 x 4 loaf pan. 

Combine butter, sugar, lemon juice, & eggs.  Sift flour, baking powder, and salt together.  Slowly add to the butter mixture alternating with milk.  Stir just until combined.  Then fold in the lemon zest & blueberries.  Bake for 65-75 mins.  test with toothpick for doneness.

To make the Glaze stir lemon juice and sugar until sugar is completely dissolved.

While loaf is still warm poke holes throughout the top and drizzle the Glaze over.  Enjoy!  This also freezes really well!
