Here’s One for the Kids!

The cake of love and jello!  I was discussing activities fitting for kids yesterday with “Mary Poppins”.  (For those that don’t know she is a fabulous friend and babysitter of not only my boys but my nieces and nephew!)  Long, ago I used to travel an hour and 15 minutes each direction to keep my sisters girls once a week.  I remember making this cake with them on one hot summer afternoon.  I thought it would be a great idea to share it with you.  It’s an easy recipe that kids of any age can help with and enjoy! 

Valentine Poke Cake

1 boxed white cake
Follow directions on the package.  Bake accordingly.  You may use any size pan you would like.  I think cupcakes are especially fitting for kids but a round or rectangle would work just as nicely!  Cool cakes completely.  Pierce layers with a large fork about every 1/2 inch.   For cupcakes you may just want to poke fork into the center of each.
2 pkgs (4 serving)  Jello – any red variety strawberry, cherry, etc.
2 C Boiling water
8 oz Cool Whip Topping
Stir boiling water into gelatin mix.  Stir at least 2 minutes until you have mix completely dissolved.  Pour over pierced cake layers.  Refrigerate 3 hours.  
Spread cakes with  whipped topping.  You can color the whipped topping any shade you desire!  Decorate however you please.  Enjoy!
