Dr Seuss-ish Cookies


Today is Dr. Seuss’s birthday!  He was born on March 2, 1904.  In honor of his day we made Dr Seuss-ish Cookies!

I also found this website that has some clever craft ideas for kids in the Seuss-ish style!

Here’s the recipe if you’d like to celebrate with us!

Dr Seuss-ish Cookies
3 oz Cream Cheese
3/4 cups Butter, softened
1 cup White Sugar
1 egg
1 t Vanilla
2 3/4 cups Flour
1 t Baking Powder
1/4 t salt
Assorted colors paste food coloring
18 Lollipop Sticks
Cream butter, cream cheese, and sugar until fluffy.  Add the egg and vanilla.
Stir in flour, baking powder, and salt.  Stir until you reach a soft dough.  Divide dough in 4ths.  Tint each a different color.  Wrap in plastic and chill 2 hours.
Preheat oven to 350 degrees.  Working with each color roll into balls and then into a rope.  swirl together forming a cookie shape and insert stick.
Bake on parchment lined sheet for 8 -11 minutes.  Cool on wire racks.
